Elafonisos Eco at Monaco’s Sustainable Gastronomy Summit

On September 21, 2023, Enrico Toja, President of our ecological association, embarked on a significant journey to the Principality of Monaco for the Sustainable Gastronomy Summit. The event was conceived by Michelin-starred chef Alain Ducasse, with support from the Prince Albert II of Monaco Foundation, The Societe des Bains de Mer, and Moët Hennessy.

Why the Summit Matters:

The Sustainable Gastronomy Summit provided a unique platform for professionals across various sectors, including our association, Elafonisos Eco, to unite and address pressing environmental challenges linked to food production.

Key Concern: Lionfish Threat

Enrico Toja highlighted the lionfish threat in the Mediterranean Sea, caused by their migration through the Suez Canal due to climate change. Lionfish populations have spread from the south to regions like Turkey, Cyprus, Crete, Amorgos, Elafonisos, and even the south of Italy. These voracious predators jeopardize Mediterranean biodiversity. To mitigate this risk, incorporating lionfish into our diets has been suggested as they offer delectable dishes like ceviche, sashimi, and more. Renowned chef Alain Ducasse was recommended to feature lionfish on his restaurant menus.

 

The Sustainable Gastronomy Charter:

One of the summit’s most pivotal outcomes was the drafting of the Sustainable Gastronomy Charter, aiming to redefine our relationship with food by promoting sustainable practices and responsible consumption.

 

HSH Prince Albert II’s Emphasis on Lionfish:

HSH Prince Albert II of Monaco highlighted the lionfish threat to the Mediterranean Sea, underscoring the importance of addressing this issue.

Monaco’s Sustainable Gastronomy Summit catalyzed change in the culinary world, aligning with our association’s mission. It emphasized the critical importance of sustainable practices in addressing pressing environmental challenges.
